Sweet Cornbread

Let's start the New Year with some good ole Sweet Cornbread. I am going to be making it two ways, from scratch and the box. Don't be intimidated  I promise it will come out sweet and delicious. This going to be a SMASH hit. So let's Slay this Plate!!

Ingredients:

Scratch

1/3 cup melted unsalted Butter ( about 6 tablespoons)

¾-1 cup white granulated Sugar (depending on how sweet you want it )

3 Eggs

1 2/3 cup Milk (whole or 2%)

2 cups All-Purpose Flour

1 1/3 cup yellow Cornmeal

4 1/2 teaspoons Baking Powder

2 teaspoons of baking soda 

1/2 teaspoon Salt

2 tablespoons of soft unsalted butter (this will go at the bottom of the baking dish/skillet)

1 tablespoon of honey (optional) - this will be used as a garnish to top the cornbread while still hot

Box

1 box of cornbread (Jiffy and Krusteaz are the most common brands) if using Jiffy get two boxes 

¾- 1 cup of sugar

⅓ cup of unsalted melted butter (about 6 tablespoons)

⅔ cup of milk (whole or 2%)

1 egg

2 tablespoons of soft unsalted butter (this will go at the bottom of the baking dish/skillet)

1 tablespoon of honey (optional) - this will be used as a garnish to top the cornbread while still hot

Vegan alternatives - instead of butter use vegan butter, instead of whole milk you can substitute it for cashew or almond milk. Also for  for a healthier sugar substitute, you can use granulated stevia 

Tools:

Baking spatula

Whisk

Two large bowls

A cast iron skillet is preferred or a square or circle baking dish

Directions:

Preheat oven to 375 degrees and add the cast iron skillet to the oven to preheat or heat on top of the stove. Do the same if using a baking dish

From Scratch and box- mix together all dry ingredients ( cornmeal, flour, baking soda, baking powder, salt, and sugar. For the box just empty the box contents and add the sugar

Mix together all the wet ingredients in the other bowl ( milk, eggs, melted butter)

Slowly combine the wet ingredients with the dry ingredients using a whisk

Once fully combined, put the 2 tablespoons of butter into the skillet to melt and pour the mixture into the skillet or baking dish 

Place in the heated 375-degree oven for about 20-30 minutes or until the center comes out clean (use a toothpick or fork to test) and it is golden brown on the top

Remove and add honey and butter to the top so it can soak and melt in (optional) 

Allow to cool, cut into slices or cubes, and enjoy!!

This can be served by itself or as a side dish
