Baigan Choka (Eggplant Dip)
This is a traditional Indo-Caribbean dish, brought by Indian migrants to the Caribbean, such as Trinidad, Guyana, and Barbados. It's a delish eggplant dip made by roasting a bunch of vegetables over a flame. It's smoky, savory, and mildly spicy, and can be eaten with roti or dipped in with a crunchy chip or cracker as to snack. Let's open up your tastebuds!!

½ yellow onion
